Dorito Casserole

This casserole has a bag of doritos at the bottom! Who wouldn't love this. I adapted this recipe from one of my friends. All my kids thought this was such a treat.~BJ

Dorito Casserole

1 bag of Doritos 
1 lb of ground turkey (or beef)
1 onion
1 cup diced chile
1 can salsa
1 can cream of mushroom soup
1 can tomato sauce
shredded cheese

Saute the onion and chile. Add the meat and brown. Stir in the salsa and tomato sauce and soup.Spread the bag of chips on the bottom of a greased casserole dish. Top with the meat mixture. Sprinkle cheese on top. Bake at 350 degrees for 30-35 minutes.

Norma's Yummy Banana Split Cake (not really a cake)

Our neighbor, Norma Leavitt, put on a wonderful bridal shower for me and served this scrumptious dessert!  I would make it for my children and they still love it and beg for it.  I could eat the whole pan by myself.~Mom

Cookie Crumb Layer:
1 and a half cup flour
1/4 cup chop nuts
1/4 cup brown sugar
1/2 cup butter
In a medium bowl, combine the above ingredients.  Press into a 9x13 pan and bake for 15 minutes. COOL!
Butter Layer:
1 cup butter, softened
2 tsp water
2 cups powdered sugar
1 tsp vanilla
Beat the above ingredient for at least 10-15 minutes until light and fluffy and smooth.  Spread over the cookie crust that has been cooled.  Slice bananas evenly over the top and then spread 1 can of crushed pineapple that has been drained, over the bananas.  Top with whipped whip cream and nuts.  Refrigerate for 3-4 hours.
Yield:  12 servings.

Creamy Salsa Chicken

Creamy Salsa Chicken:  This is another crowd pleaser and a must-have crock pot recipe.  Put the following into a crock pot:~Mom

1 bag of frozen chicken breasts (6-8)
1 bottle of salsa,  I prefer Picante
1-8 oz package of cream cheese

Cover and cook on low for 6-8 hours or on high for at least 4 hours.  Shred.  Stir the sauce.  This can be served on top of rice, on a bed of lettuce, or inside of your favorite taco shell.  I always like to add sour cream, cilantro, shredded cheese, tomatoes, etc. for extra pizazz!  Remember there are NO tricks to this recipe--just throw it in and let it do its magic!  LAUREL UDALL

Mango Chicken (Better than Cafe Rio's)

Easy Mango Chicken-This is a crock pot favorite!  It can be shredded and served over rice or on top of cut up romaine lettuce and tomatoes and shredded cheddar cheese, or in a taco shell (hard or soft).  This is a family pleaser!!!~Mom

Throw into your crock pot the following:
1 bag of frozen chicken breasts (6-8)
2 cups of already prepared mango salsa (Costco has the best) but local stores carry mango salsa in their fresh salsa aisle (refrigerated)
1 cup of brown sugar
Cook on high for at least 4 hours or on low for 6-8 hours.  Shred the chicken with two forks.

Better than Sex Cake

The name says it all. I know we've all had this one but I wanted to NEVER forget it.~BJ

Better than Sex Cake

1 chocolate cake mix
1 container of cool whip
1 bottle of caramel
1 bag of toffee chips
1 small can of sweetened and condensed milk

Bake cake as per box directions. Poke holes into a warm cake (I use the end of a wooden spoon). :Pour canned milk evenly over the top of cake. Then pour the entire bottle of caramel over the cake. Next sprinkle the bag of toffee chips over the cake and refrigerate. The longer it sits in the fridge, the better it gets. Top with cool whip once ready to eat.

Artichoke Chicken Pasta in Cream Sauce

Artichoke Chicken Pasta in a Cream Sauce

1 pound artichoke hearts
3-4 chicken breasts, thawed
1 Tbs. olive oil
salt and pepper
red pepper flakes
2 tsp. dry Italian dressing mix

*Toss all ingredients together and place in a greased casserole dish.

1/2 cup chicken broth

*Pour over the top of chicken.

2 Tbs. melted butter
1/3 cup Italian bread crumbs
1/3 cup Parmesan or Romano cheese

*Mix together with a fork and sprinkle over the top of chicken and artichokes. Bake at 400 degrees for 30-35 minutes or until the chicken is done.  Toss with pasta of your choice and cream sauce.

Cream Sauce

1/2 cup butter (1 stick)
2 cups heavy cream
2/3 cup Parmesan cheese
2 tsp garlic powder
salt and pepper to taste

Simmer all ingredients in a heavy sauce pan for 20 minutes.

Homemade White Cake with Fresh Strawberry Buttercream

I got this recipe from one of my good friends, Jen. She is very health conscience and makes EVERYTHING from scratch. This is my favorite summer-time cake.~BJ

Homemade White Cake with Fresh Strawberry Buttercream

Cake:
3 cups flour
2 cups sugar
1 cup butter (2 sticks)
4 eggs
2 tsp. vanilla
2 1/2 tsp baking powder
1 cup milk

Sift together dry ingredients. Add slowly to wet ingredients. Bake is a greased 9x13 casserole dish at 350 degrees for 35 minutes, or until a knife poked in the center comes out clean

Strawberry Buttercream Frosting

4 cups powdered sugar
1 cup butter, softened
1/2 cup strawberries

Wash and hull the strawberries. Cream berries with the butter and powdered sugar. Frost a cooled cake.
Tip: you can also use frozen (thawed) strawberries.

Sweet Potato Bread

Since sweet potatoes are one of my favorite types of produce, I love putting them in bread. It makes it so moist and sweet. Eat it warm, fresh out of the oven. Recipe from allrecipes.com`~ Christine

Sweet Potato Bread

1 1/2 cups white sugar
1/2 cup oil
2 eggs
1 3/4 cups flour
1 tsp baking soda
1/4 tsp salt
1/2 tsp cinnamon
1/3 cup water
1 cup cooked and mashed sweet potatoes
1/2 cup chopped pecans
* Combine sugar and oil. Beat well. Add eggs and beat. Combine flour, baking soda, salt and cinnamon. Stir flour mixture into egg mixture alternately with water. Stir in sweet potatoes and chopped nuts. Pour batter into greased 9x5 inch loaf pan. Bake 350 for about an hour.
